Access Level Options
Is there a setting that allows a user to update the status of their task but does not allow them to adjust the hours for the task?
In the access level permissions, you can only provide View/edit to the objects like Projects, Tasks, Documents etc. But restrict the permissions, you may try the object sharing using View/Contribute/Manage permissions in the task level
