There is detailed explanation to create project using the latest archetype.

Try this using command line:

mvn -B archetype:generate \
-D archetypeGroupId=com.adobe.aem \
-D archetypeArtifactId=aem-project-archetype \
-D archetypeVersion=35 \
-D appTitle="My Site" \
-D appId="mysite" \
-D groupId="com.mysite" \
-D aemVersion="cloud" \
