I am struggling to find how the AEM Core Form Component's Mail Action, and how to set this up.
Please if you understand how this works, let me know.

I would prefer to send the Action "Mail" to my own 3rd party application with Oauth.

I think you are checking at wrong location.

correct path is https://github.com/adobe/aem-core-wcm-components/tree/main/content/src/content/jcr_root/apps/core/wcm/components/form/container/v2/container
