How to specify Language in Page Properties Advanced tab to point to specific language?

When looking at a page properties Advanced Tab, there is a drop down for Language. In my case, I am trying to have Chinese (Hong Kong) and Chinese (Taiwan) to point to the same language. Where do I go to change the value of this dropdown? How do I add a new language to this dropdown?

To add a new language to your drop down or change existing values navigate to /libs/wcm/core/resources/languages

Copy one of the existing jcr:nodes representing language, name properties accordingly to your needs.
