Email sent based on segment/role
We have an email that will be sent to interested people upon form completion. How do we set the campaign to specify which email goes to a specific role/segment? We have four emails based on the interest.

You can use Add Choice:
But I would recommend you look into segmenting a single email instead using Dynamic Content. Segmentations are built to work with the Dynamic Content feature (though they can be used independently, as here) and save you from having to maintain lots of assets.
