The BizOps team is going to merge duplicated records in our CRM and I was wondering how that impacts Marketo.
Does it also merge the record in Marketo? What happens with the log activity, is it also merged?

Yes, the Marketo people will be merged and their Activity Logs as well.
However, you should look out for possibly unwanted behavior such as scores being added and (Marketo) COs being orphaned. The default effects of a merge may not conform to business expectations. Test it!
