Missing “Preferred Language” filter

I’m trying to make a dynamic unsubscribe footer since our company sends emails in multiple languages.
I’m on step 6 of this How To, but my instance is missing the “preferred language” filter. I’ve attached a screenshot

That's a custom field you need to create. See step #1.

Also bear in mind that segments are not guaranteed to be set at exactly the same time someone is created. Thus you should not send to new people if they're still in the Default segment, and make sure every segment is explicitly defined — in other words, don’t treat Default as en, have an explicit en segment.
