If you use Workbench you also use the Adobe Designer. The link here is a very simple example of a dynamic table that breaks onto follow on pages. I hard-coded the number of lines in the Binding section of Row1. Important is that you change the Page subform (Page1 here) to Subform - Content Flowed (Top to Bottom) and Allow Page Breaks within Content. The rest should be done with the Table object.

      No... this is Workbench however, Workbench isn't necessarily used. If that makes sense?

      Sorry if I wasn't specific enough, however there's a client that wants a text field enlarge and create another page if needed as the form becomes full and push the table to the next page if needed. How do you do this?
